Vegan cookbook - for beginners

My Mum is getting more into the idea of going vegan for Dad's diabetes so I am keen to encourage her and get her a vegan cookbook. Any suggestions? I would want something easy, quick, healthy, low GI, with pics, not too many weird ingredients, and preferably metric or cup measurements (not imperial).

Would love to hear your suggestions!

PS. She is in New Zealand, if this makes any difference on ingredient listings etc...

  1. Hi Niki, It's not all Vegan but there are plenty of vegan options and it's all about healthy food and good flavours. The title says it all really: "Wholefood - Heal, Nourish, Delight" by Jude Blereau. She's a Perth lady and I absolutely love this book. She's online too if you want to check it out. Much better than any vegan book I've bought from the US.

  2. i really like the vegan family cookbook - it's more centered around families who have children but the recipes are really straightforward, easy to make and to adapt

  3. how it all vegan is good.. I like that fact that it doesnt use a lot of fake meats and they're all simple recipes with lots of vegies... an easy way in

  4. Brenda Davis has the vegan-oriented Defeating Diabetes. Along with that, you might just get a simple, wholesome vegan cookbook like Jennifer Raymond's Peaceful Palate. Jennifer has cooked for Ornish and McDougall patients, and her meals are easy and delicious.

  5. Vive le Vegan or Eat, Drink & Be Vegan by Dreena Burton are awesome. I give them out as gifts. If there's an obscure ingredient chances are you can find it a health food store or a well-stocked gorcery store and the ingredient will be used again in another recipe.
